Basil Pesto Quinoa with Italian Sausage 

So I got home from work this afternoon, hungry, and realized I had to whip up a meal really quick.

First thing I saw when I opened my freezer was a tray of Johnsonville Hot Italian Sausages. I literally just took a sausage, rinsed it, and threw it in a pan and began cooking it covered on medium to high heat. I kept turning the sausage making sure I “defrost” all sides and then began cutting it into cubes in the pan itself. You can also take the sausage out of the pan and use a cutting board, but I wanted to avoid using mutiple dishes. After adding in some garlic powder and cayenne pepper powder, I continued to sauté the sausage for about 3 minutes until it is fully cooked.

I added in some cooked quinoa just enough for my serving, about a tablespoon of Classico’s Traditional Basil Pesto, sautéed and covered the pan, and let it cook for about 2 minutes.

I served this delicious super simple quinoa dish with just a little bit of Parmesan cheese.

And that is all it took. In less than 10 minutes, I was on my couch with my mildly spicy, delicious, yet fairly healthy dinner 🙂
